This tasty dish is a cauliflower based gratin – it will be a crowd pleaser! Great as a side dish.
Ingredients:
- 1 Cauliflower (or Romanesco)
- 4 Tbs Butter
- 4 Tbs Flour
- 1 Tsp Mustard Powder
- 2 Cups of Milk
- 1.5 Cups of grated Cheese
- Salt & Pepper to taste
- 1/2 Cup of fresh Breadcrumbs (optional)
Directions:
Preheat oven to 400˚
Start a pot of water boiling. Wash and prep cauliflower, cutting the head into florets. Par-boil the cauliflower for about 8-10 minutes or until just tender. Drain and set aside to dry.
Melt butter in a saucepan and add flour, making a roux. Stir the mixture with a whisk for about 1 minute. Add mustard powder, salt, and pepper and then begin pouring the milk into the mixture, stirring continuously until the mixture thickens. Stir in 1 and 1/4 cups of the grated cheese, saving 1/4 cup for the top of the dish.
Place the cauliflower in an oven-safe baking dish and pour the cheese mixture over the top. Combine the breadcrumbs (if using) and the remaining cheese. Pour over the top of the cauliflower.
Bake for about 30 minutes, until the top is browned and bubbling.
