In California our weather allows us to grow citrus almost year round! And when the apple season wanes (although apples can be stored for quite a while) lemon season is picking up. On the farm we have Meyer lemons and Fuji Apples right now. Combine them and you can have all sorts of delicious recipes. This one is for a concentrated juice full of vitamin C and immune boosting ingredients. It is also bright yellow! This will make one quart jar of juice
5 medium Fuji Apples
5 medium Meyer lemons
A quarter length branch of tumeric root (fresh) to taste *bitter
A quarter length branch of ginger root (fresh) – to taste *spicy
- Quarter lemons and apples unpeeled.
- Put all ingredients in a juicer or a blender.
- Strain liquid (multiple times if blending).
- Add honey to taste
- Serve mixed with soda water and a sprig of mint.
Keeping the peels on the lemons adds a bolder lemon flavor and yellow color. If you do not like a hint of bitterness you can leave this out, or add more apples. Tumeric has anti-inflammatory properties and ginger is a digestive aid and immune system booster. They are a great team if you feel a winter cold coming on.
