Ingredients:
- 6 Cups Baby Spinach, and/or arugula
- 1 Cup Sugar Snap Peas, slivered on the diagonal
- 1 Cup Fresh Strawberries, sliced
- ½ Cup Goat Cheese crumbled
- 3 tablespoon Slivered almonds, toasted
- 2 tablespoon Fresh mint leaves, torn
- 2 tablespoon Olive Oil
- 2 tablespoon Balsamic Glaze
- Salt to taste
- Pepper to taste
Directions:
- Wash and dry produce. Slice strawberries and snap peas.
- In a large bowl combine: spinach, snap peas, strawberries, goat cheese, slivered almonds, mint leaves, salt, and pepper. Drizzle with the olive oil and balsamic glaze.
- Toss to combine. Divide between plates. Top with more almonds and goat cheese if desired. Serve with love and enjoy!
