Strawberries are in abundance here in the Farm Discovery fields! This yummy fruit is a springtime staple. There are so many wonderful ways to make treats and meals from strawberries, besides an easy delicious strawberries and cream. One easy to way stretch out the flavor is by making a jam. Jam is so versatile and last about 2 weeks in the fridge (without canning). You can add jam into yogurt, ice them for smoothies, add to a vinaigrette dressing, and so much more! Here’s our easy jam recipe with only 4 ingredients.

Yields ~1 ¼ cups

Ingredients:

  • 1 lb strawberries
  • 1 tbsp pectin
  • 3/4 cup sugar
  • Juice of 1/2 Lemon

Directions:

  1. Hull strawberries, then chop.
  2. Add two metal spoons and small plate into freezer.
  3. Add chopped berries into large bowl or pot. Add sugar, pectin, and lemon juice. Cover and let sit (mascerate) for 25 minutes.
  4. After maceration process, mash berries into a slightly chunky syrup.
  5. Place mashed berries into a pot. Set stove to a medium-high heat. Constantly stir the pot to not burn berries! Continue stirring until 215F or the lack of foam and dark red color. Test consistency with a frozen spoon and plate. Texture should not be runny and not too sticky.
  6.  Let berries cool in a separate bowl
  7. Add jam into a same temperature jar. (Hot to hot, cold to cold)
  8. Add to fridge. Enjoy for 1-2 weeks or freeze for longer preservation
